Drying is one of the oldest methods of food preservation still in use today. It is safe and can be quite economical. The nutritive value and palatability of dehydrated foods can range from the aptly-named “leather-breeches”—a dried green bean recipe from great grandma’s cookbook—to gourmet fruit leathers. It all depends on proper preparation.
