You must first provide yourself with an iron plate. This should be about eighteen inches square and three-quarters of an inch thick. The surface should be perfectly level and very smooth, though, not polished. Muffin and crumpet makers generally have the plate (larger than that I have named, and circular) firmly imbedded in brickwork, with a furnace under it, such us is placed under a copper.
