🥣 Pantry Challenge Super Bowl Snack Spread (No Grocery Store Run!)
👋 Hey friends — Jessica from Three Rivers Homestead here.

🏈 We’re in the middle of the Three Rivers Challenge (no grocery store in January + February), and this week I had a last-minute surprise: my teenage boys reminded me it was Super Bowl Sunday… after church. 😅

🚫🛒 No store run allowed.
✅ So I ran to the pantry and treated it like a kitchen puzzle: What can I build with what we already have?

⏱️ It took about 3 hours start to finish, but the payoff was worth it — I cooked once, set everything out, and the family snacked the rest of the day.

🍽️ What I Made (All From Pantry + Freezer)
🍿 Popcorn (always a pantry win)

🍣 Simple Sushi Rolls

sushi rice + rice vinegar
nori + soy sauce
carrots + canned water chestnuts (no fresh veg options, so we made it work!)

🥄 Lentil Sloppy Joe Dip

lentils + canned sloppy joe sauce (using up older pantry stock)
browned ground beef added
served with homemade crackers

🍕 Pizza Rolls (Cinnamon Roll Style)

homemade dough
quick thick pizza sauce (tomato sauce + tomato paste)
toppings from pantry/freezer: canned mushrooms, frozen peppers, pickled banana peppers, pickled red onions
no cheese here (dairy-free home), but still a huge hit

🍋 Cranberry Lemon Bars

classic lemon bar base, but I used home-canned cranberry lemon juice for the filling
verdict: split opinion — some liked classic, some loved the cranberry twist

🥚 Deviled Eggs + Homemade Mayo

mayo from scratch (egg yolks + mustard + vinegar + olive oil)
added banana pepper brine for a little punch

🫘 Bean Dip (Instant Convenience)

home-canned refried beans turned into dip in minutes
🌶️ Air Fried Chickpeas

salted + chili powder
note to self: add a little oil next time for extra crisp

💡 The Big Takeaway
🧠 A stocked pantry isn’t about “just food.”
It’s about flexibility, convenience, and being able to pull something together when life surprises you.

❤️ Even though it took time, I loved that it meant I could relax later and actually enjoy the evening with my boys and my husband.
